Prince Harry Enjoyed Finger-licking Fried Chicken at New York Restaurant

Wilson expressed her gratitude to Insider, sharing that she was deeply honored when the Duke of Sussex opted to enjoy her signature fried chicken with his bare hands. 

In a recent interview with Insider, Wilson excitedly discussed her involvement in Flavors of the Open, an event where she will be serving 700,000 fans at the US Open alongside renowned chefs such as Pat LaFrieda and “Chopped” star Alex Guarnaschelli. Following the gradual reopening in September 2021, Prince Harry and Meghan graced New York City for the Global Citizen Live charity concert. This marked their first public appearance as a couple in over a year and their first since their explosive interview with Oprah Winfrey in March. 

Thus, when Harry and Meghan selected Melba’s for a public lunch, all eyes turned to Wilson’s revered restaurant.

“When I found out they were coming, I initially thought it was a prank,” Wilson confessed to Insider. “I thought someone was playing a joke on me.” 

According to Wilson, the Duke and Duchess of Sussex were adamant about keeping the restaurant open to the public during their lunch date. In fact, they dedicated much of their time engaging in conversations with both the chef and her patrons. 

“From the moment they arrived at Melba’s, their warmth radiated genuinely,” Wilson shared. “Witnessing their love for each other, their kindness, and the way they spoke to one another, it was absolutely beautiful.” 

During their visit, Harry and Meghan indulged in Wilson’s spring rolls, country catfish, yams, collard greens, and her famous chicken and eggnog waffles.

“Prince Harry exclaimed, ‘Wow, I love the waffle,’ in his charming British accent,” Wilson reminisced. “And I felt truly honored when he used his fingers to savor the chicken — he observed proper etiquette!” 

“I thought to myself, ‘Wow, Harry knows how to enjoy fried chicken,'” she added with a chuckle. “I was genuinely impressed by that.” 

Wilson’s chicken-and-waffles dish features a blend of dark and white chicken meat, accompanied by strawberry butter and maple syrup. The chef revealed to Insider that one of her secrets lies in marinating both the meat and flour. 

“With each bite, you experience the crispy outer layer of the chicken, which is enhanced by the seasoned flour,” she explained. “Once you sink your teeth into the meat, you’re greeted with moistness as a result of the marination process. Bursting with flavors throughout — that’s the essence of a well-executed fried chicken masterpiece.” 

According to Wilson, Harry and Meghan’s visit to Melba’s had a profound impact on both the business and the spirit of Harlem. 

“People were eager to dine where Meghan and Harry had dined,” she remarked. “It was tremendously beneficial for the community and served as inspiration for individuals with dreams. How does one go from starting at the bottom to having the Duke and Duchess grace your restaurant? These are the tales we often read about in storybooks — and they do come true.”
