Shortly after, Lamonaca partnered with Salvatore Gagliardo, a Sicilian pastry chef and master pizzaiolo, and together they opened their first restaurant in Union Square. Despite the challenges of finding a prime location within their budget, the pandemic opened up possibilities as landlords were eager to fill their spaces, giving Unregular Pizza an opportunity to secure a high-profile spot in Union Square. In terms of aesthetics, Unregular Pizza transcends the traditional red gingham look associated with pizza parlors. Instead, they opted for a 1990s-inspired design that evokes nostalgia. The menu at Unregular Pizza predominantly features Roman-style pizza, which is cooked in a pan with dough that has been fermented for 72 hours, resulting in a crispy and light texture. The pizzas are then loaded with toppings. They also offer pasta bricks, which are cakes made from fried pasta with sauces, a traditional method of repurposing leftover pasta into a satisfying lunch. Lamonaca, a resident of New York for the past 15 years, aims to elevate the pizza scene in a city known for its slices and hopes to expand Unregular Pizza to every neighborhood. The love for New York and its pizza culture drives Lamonaca to grow the brand within the city before venturing into other cities.
