Roberta Dowling was my teacher when it came to the art of seasoning.

During my time at the Cambridge School of Culinary Arts near Boston in the late 1990s, I learned from Roberta, the founder of the school. She was a charismatic and inspiring figure who emphasized the importance of tasting and seasoning. She taught us to gradually add salt to enhance the flavors. I can still recall the look of concern on her face when she tasted something that lacked seasoning and her infectious smile when she tasted a dish that was perfectly balanced.

That smile from Roberta meant the world to me, as it did to all of her students.

Roberta, an Italian American who previously taught at Madeleine Kamman’s school, passed away in 2015 at the age of 75. However, her teachings continue to influence my cooking even after all these years.
