Mark Sansom, content director of The World’s 50 Best Bars, highlighted the growing emphasis on food programs in these establishments, with bars like Singapore’s No. 33 Manhattan offering elevated bar food. Mexico City, Dubai, and Bangkok were also recognized as prominent cocktail capitals, with multiple bars in the top 50. The list is the result of votes from industry experts, including bartenders, bar owners, drinks writers, and cocktail connoisseurs. The pandemic has transformed the bar scene, with customers staying in one place for longer periods. To maintain engagement, bars have expanded their entertainment offerings and enhanced their food programs. Blurring the boundaries between food and drink, bars like Double Chicken Please and Two Schmucks are incorporating flavors and techniques associated with cooking. Sansom pointed out that tools commonly found in restaurant kitchens, such as the centrifuge, have also made their way into craft cocktail bars. The significance of custom glassware, occasionally inspiring the creation of drinks, was also emphasized.
