Olivia Amitrano and Nicholas Vazquez Tie the Knot in Upstate New York

Olivia Grace Amitrano and Nicholas Ryan Vazquez were just teenagers when their paths crossed. Despite their youth, they had the wisdom to take things slow, which ultimately allowed their relationship to blossom and endure. Their journey began on October 5, 2009, at Gino’s Pizzeria in Yonkers, N.Y, where they both grew up. At the time, Olivia was 16 years old, and Nicholas was 18. Coincidentally, Olivia was accompanied by her best friend, who happened to have a sporadic relationship with Nicholas’s brother.

Olivia had heard rumors that Nicholas was a ladies’ man, but she maintained her composure and played it cool, even though she found him captivating. Both Olivia, who is now 29, and Nicholas, who is 31, were seeing other people on and off at the time. They would occasionally cross paths at parties, and Nicholas tried to pursue Olivia. However, they remained friends.

Their connection continued to grow during late-night conversations in Nicholas’s 1990 champagne-colored Volvo, parked in front of Olivia’s house. They would take turns playing their favorite R&B songs on their iPods, gradually falling in love over the course of many nights spent venting and bonding.

However, they didn’t see each other for six months starting in November 2010 when Nicholas decided to give his on-and-off girlfriend another chance. Unfortunately, their relationship didn’t work out. Then, on May 26, 2011, just a few weeks after Olivia happened to break up with her high school boyfriend, Nicholas unexpectedly reached out to her.

Nicholas confessed that he had often thought about Olivia and simply wanted an excuse to see her. Olivia reminisces about that moment, stating, “He needed lunch at work and was short on cash. I brought him microwaved mixed vegetables with butter and pasta that I boiled with tomato sauce.” As they exchanged a casual hello kiss and locked eyes, they both realized how natural and familiar the moment felt.

The very next day, Nicholas surprised Olivia with a Caesar salad. It became apparent that food had become their love language. This gradually became a pattern in their relationship.

In August 2011, just before Olivia was set to begin attending Fordham, she confronted Nicholas about the uncertain future of their relationship. Nicholas didn’t want to hold her back from experiencing the full “college experience.” However, Olivia was decisive. She told him, “I know what I want. You’re my boyfriend.” Nicholas replied with a sweet smirk, expressing his agreement as long as she was certain.

After an eye-opening experience with a local Chinese medicine practitioner and herbalist while seeking remedies for her health issues in college, Olivia developed a passion for integrative medicine. In 2013, she started Organic Olivia, a blog and e-book platform centered around healthy living. Later in 2014, she also began Living Earth Jewelry, a jewelry business that complemented the Organic Olivia brand.

Eventually, Organic Olivia transformed from a simple blog into a full-fledged e-commerce website offering herbal remedies. In September 2019, Olivia decided to close down the jewelry business and focus solely on Organic Olivia as an herbal supplement company.

Nicholas, on the other hand, initially worked in a local factory designing and embroidering caskets from 2009 to 2014. However, due to the health risks involved, he decided to pursue unionized ironwork. He believed that working with his hands while earning a decent paycheck would provide him with greater fulfillment.

Unfortunately, ironwork wasn’t the right fit for Nicholas. So, after confirming his genuine desire to be part of Olivia’s business, he joined her in managing Organic Olivia. Olivia would handle the marketing aspects, while Nicholas would assist with customer service. They made a great team – Olivia wrote the handwritten thank-you notes, and Nicholas took care of the mailing.

After Olivia graduated from college in May 2015, the couple found an apartment together in Yonkers. Two years later, they decided to venture off the grid and live in Costa Rica, seeking a technology detox and a simpler lifestyle. However, their experiment only lasted six weeks. The fear of landslides during the rainy season drove them to leave Costa Rica and temporarily move in with Olivia’s parents as they searched for a new home.

Finally, they settled in a townhouse in Hastings-on-Hudson, N.Y., where they continue to reside. Olivia, a certified herbalist and CEO of Organic Olivia, holds a bachelor’s degree in psychology from Fordham. She has also completed multiple herbalist programs to enhance her knowledge and skills. Nicholas, a graduate of Charles E. Gorton High School, currently focuses on creating recipes for a new cookbook that reflects his Puerto Rican and Ecuadorean heritage.

After a decade of being together, Nicholas realized that they were still growing, both individually and as a couple. This encouraged him to propose. On June 3, 2021, during the recording of the first episode of Olivia’s podcast, “What’s the Juice,” which was being filmed, Nicholas seized the opportunity to propose on their 10-year anniversary. This surprise left Olivia in shock, as Nicholas cherished their privacy. They kept their engagement a secret for three weeks before revealing it at an engagement party disguised as a podcast launch party, where they surprised their families. Later, they released the podcast episode to announce their engagement to the world.

Finally, on July 15, 2023, Olivia and Nicholas tied the knot at Foxfire Mountain House in Mount Tremper, N.Y. Surrounded by 93 guests, the couple exchanged vows led by Sylva Dvorak, an ordained minister. The wedding venue perfectly captured their essence as a couple, symbolizing their vibrant spirits and love for nature. The whole experience felt real and true to their relationship.

Nicholas donned an ivory jacket and black pants by Alan David Custom. Initially, Olivia purchased a white Danielle Frankel gown for the wedding. However, just three weeks before the big day, she realized it didn’t reflect her true self. Stepping away from the pressure of conforming to traditional bridal standards, she decided to wear a vintage, pink 1950s dress she found on eBay for $200. Walking down the aisle in her unconventional dress, paired with vintage earrings, was the best decision she ever made. For the reception, Olivia changed into a short dress by Rotate Birger Christensen, but it was her ceremony gown that truly captured her playful spirit and authenticity.

When reminiscing about their journey together, Olivia and Nicholas expressed gratitude for their ability to grow in unison and follow similar paths. This shared growth served as a catalyst for Nicholas’s proposal, and their wedding serves as a celebration of their love, resilience, and commitment to each other.
