Discover the exquisite elegance of The Pig & Palm, a renowned restaurant situated in Cebu, the captivating island-province in the magnificent Philippines.

Founded by the esteemed chef Jason Atherton, originating from the United Kingdom in July, 2016, The Pig & Palm transcends traditional culinary boundaries. Atherton, known for leading Michelin-starred restaurants like Pollen Street Social and City Social in London, has collaborated with esteemed celebrity chefs including Gordon Ramsay and Marco Pierre White.

Eager to explore Atherton’s culinary prowess in the Philippines, I enthusiastically reserved a table during my visit to Cebu in late June. Having dined at Ramsay’s restaurant in Kuala Lumpur, Malaysia, and being somewhat disappointed, I was intrigued to see if Atherton’s establishment in Southeast Asia would exceed my expectations.

Upon arrival, The Pig & Palm exuded an air of opulence. Nestled on a serene street, its grand entrance comprised a colossal wooden door leading to an intimate dining area and a well-stocked bar. The gray brick walls and floor, complemented by minimalist wooden and steel furniture, created an aesthetically pleasing ambiance.

Neri & Hu, the internationally acclaimed design firm based in Shanghai, divulged that the predominant religion of Cebu, Roman Catholicism, influenced the restaurant’s captivating design. Lounge alcoves, reminiscent of a modern-day confession booth, became the highlight for architect Lyndon Neri, as he shared with Tatler.

Beneath the soft, ambient lighting, couples and families effortlessly engaged in conversation, accompanied by the joyous sounds of laughter. While observing the scene, I couldn’t help but notice the small number of patrons present that evening. Despite arriving during dinnertime, albeit on a weekday, the bar remained enticingly empty, showcasing an extensive assortment of brown liquors and spirits adorning the open shelves. The diligent bartender meticulously cleaned the counter with grace.

The highlight of the establishment undoubtedly was its kitchen. Sporting an open concept design, diners were treated to an unobstructed view of the talented chefs skillfully crafting each delectable dish for the evening.
