Empty nester compelled to cook for a full house after kids’ return home.

As I settled into the role of an empty nester, it was akin to wading into the ocean – cautiously, but with enough enthusiasm. I began to revel in the little pleasures, such as returning home to a clean sink and no laundry waiting to be done. The freedom of deciding to have a simple dinner with my spouse was liberating. However, things took an unexpected turn when my children announced their plans of moving back home. Suddenly, our humble abode became crowded, and I felt a tinge of panic. Could we all really coexist under one roof, with our disparate lifestyles and habits?

Despite my apprehension, I know we will make it work. I plan to continue my tradition of cooking healthy meals that please some palates, but not all. With Elliot, my eldest, living with us right now, I’m slowly warming up to the idea of a bustling household again. Cooking with Elliot is always a fun experience – he loves to eat and cook, so we complement each other in the kitchen. But as always, he tends to leave just before the dishes need to be done. We’re working on that one.

A recent salad I made was a hit with everyone – the classic combination of avocado and cucumber sprinkled with salt left us all feeling refreshed. For the main course, we made crispy chicken sandwiches with all the toppings for a bit of nostalgia. It was a joy seeing Elliot taking charge of seasoning the flour, and we had fun creating the perfect sandwich piled high with pickles and lettuce. Dessert was a delicious strawberry crisp, made with granola for extra flavor.

In the coming days, our little house will be filled with more Barretts, dogs, and a seemingly crowded space, but I know it’ll be just fine. There may be disagreements and different eating habits, but we will make it work. Just like in the kitchen, everyone’s different personalities will shine, and that’s what makes life exciting.
