Classic Crust Food Truck: Indulge in Irresistible Pickle Pizza with Wood-Fired Perfection

Food trucks continue to dominate the streets, offering a wide range of cuisines at local markets, outdoor activities, and even near the Capitol. In this installment of our series on area food trucks and their operators, we had the pleasure of speaking with Julie Carioto, co-owner of Classic Crust Food Truck, alongside her husband, Greg Carioto.

How did the Classic Crust Food Truck come to be?

I had the fortunate opportunity to be a stay-at-home mom for 17 years. All those years ago, I attended culinary school, which means I’ve always had a passion for cooking. As my kids grew older, I started contemplating my next move. A friend introduced us to a vintage truck with a wood-fire oven that was up for sale on eBay in South Carolina.

We made the decision to check it out in person, and when we laid our eyes on it, something just clicked. We couldn’t explain it, but we knew we loved it and were ready to dive in. The fact that the truck came equipped with a built-in pizza oven, something we were already familiar with, sealed the deal. And so, in 2015, we officially started our business.

How would you describe Classic Crust’s culture?

We once catered a party for Waste Management, and surprisingly, they didn’t request pizza. Instead, they wanted hamburgers and hot dogs, which we were more than capable of preparing in our amazing oven. That’s the beauty of it – the oven can be used for various types of food. Plus, the wood-fire aspect adds a remarkable flavor.

In my opinion, we have the best working environment. I still recall people warning us that we’d have to work every weekend, but to me, it’s exciting because we get to attend parties every weekend and bring joy to people’s faces. It’s a fun experience, and I absolutely enjoy experimenting with unique pizza creations.

What are some crowd favorites on your menu?

Naturally, we offer all the classic options, but our creativity truly shines through in our unique selections. I’m proud to say we make everything from scratch, including our pulled pork, which happens to be a big hit with the crowds. Other popular choices include our pear and brie pizza with a honey drizzle, our pulled pork pizza, and our fig jam and goat cheese pizza.

How can people find you? Do you have regular stops?

Alongside our food truck, we also own a restaurant called Classic Crust Brick and Mortar in the Clifton Park area. However, we only cater private parties with our truck. If you’re interested in booking the truck for an event, simply fill out an inquiry form.
