All Year Long, Southerners Eagerly Await the Sandwich

There is an ongoing debate regarding whether or not to toast the bread for a tomato sandwich. Many Southerners, including Mary, believe that the soft texture of untoasted bread is crucial for the traditional tomato-sandwich experience. However, Jason Skrobar, a food stylist and author of the upcoming book “The Book of Sandwiches,” suggests using toasted sourdough in his variation called My Perfect Sandwich, which includes sun-dried-tomato mayonnaise. J. Kenji López-Alt, a Seattle resident, prefers to pan-toast only one side of each slice, keeping the outsides soft while still achieving a toasty flavor. It is worth mentioning that neither Skrobar nor López-Alt are from the South.

Alternatively, a quick stint in the toaster provides the opportunity to enjoy the best of both worlds – the bread retains its structure under the juicy tomato while maintaining its softness on the inside. Ultimately, personal preference plays a significant role in choosing whether to toast the bread or not. As long as you find yourself devouring the sandwich over the sink, you’re on the right track.

In my opinion, a good tomato sandwich is characterized by generous amounts of mayonnaise that spread and mingle with the tomato. According to Mary, if you’re from the South, you either grew up in a Duke’s household or a Hellmann’s household. However, the ongoing debate between Duke’s and Hellmann’s doesn’t excite me, as I believe it is a dull and irrelevant topic (although I do enjoy stirring up conversations about it). In this particular case, I use mild-tasting Hellmann’s because I like to sprinkle a little furikake over the mayonnaise before adding the tomatoes. The seaweed in this flavorful rice seasoning enhances the tomato’s savory taste, intensifying the harmonious combination of fruit, bread, and condiment. The bold flavors of Duke’s or Kewpie may overpower all the elements in my perfect tomato sandwich, despite their deliciousness.

Throughout the year, I yearn for a sandwich like this – the first delicious tomato sandwich of the season.

Recently, Mary informed me that she found excellent heirloom tomatoes at the farmers’ market, those beautifully imperfect ones in shades of red, green, and purple. She also restocked her beloved Merita bread, used Duke’s (as always), and shared a video of herself enjoying her favorite sandwich with her 400,000 fans. “This is the happiest I’ve ever been,” she said to me, expressing her gratitude for the opportunity to work for herself and create A.S.M.R. videos that help people all over the world, including myself, relax and fall asleep each night. As I dream about my tomato sandwich tonight, Mary constructs her own, calmly and quietly advising us, “Don’t knock it till you’ve tried it.”
