A Chef-Approved Recipe: Pappardelle with Peas, Broad Beans, Parmesan, and Preserved Lemon by Angela Hartnett

I have a deep appreciation for the beauty of spring, and this pasta dish perfectly captures the essence of the season. It celebrates the freshness and simplicity of seasonal ingredients, with a focus on quality and flavor. In particular, I love using great olive oil, fresh vegetables, and flavorful preserved lemons.

The best part about this dish is that it’s quick and easy to make, so you can enjoy it whenever you like. However, I personally find it most satisfying for lunch, especially on a leisurely Saturday. I recommend pairing it with a fresh, dry Italian white wine, some crusty bread, and a refreshing green salad.

Ingredients:
– 50ml Belazu Early Harvest Extra Virgin Olive Oil
– 1 clove new season garlic, finely chopped
– Salt and black pepper
– 375g Belazu Dried Pappardelle

To begin, heat a generous amount of olive oil in a frying pan along with the garlic and a pinch of salt. Sauté gently, being careful not to let the garlic brown. Set aside.

Meanwhile, bring a large saucepan of salted water to a boil. Cook the pappardelle according to the package instructions, stirring occasionally.

While the pasta is cooking, add the peas and broad beans to the frying pan with the sautéed garlic. Pour in a small amount of pasta water and cook for a few minutes.

Drain the cooked pasta and add it to the frying pan. Toss in the preserved lemon, mint, and a generous amount of grated Parmesan. Season with black pepper and mix everything together. If the dish seems dry, you can add a little more pasta water to loosen it up. Serve with additional Parmesan on top.
