Ingredients:
– 400g baby plum or cherry tomatoes
– Salt
– 1 x 400g tin butter beans, undrained

For the marinade:
– 2 tbsp harissa paste
– 1 tbsp tomato paste
– 1 tsp apple cider vinegar
– 75ml olive oil

For the herb relish:
– ½ bunch coriander, including stalks, roughly chopped
– ½ bunch parsley, including stalks, roughly chopped
– 2 small gherkins, finely chopped
– ½ green chili, finely chopped
– 1 tsp apple cider vinegar
– 100g rapeseed oil
– ½ tsp brown sugar

To serve:
– Lettuce leaves, toast or flatbread

1. Prick the tomatoes all over with a fork and place in a large bowl.

2. Whisk together the marinade ingredients with half a teaspoon of salt and drizzle over the tomatoes.

3. Cover and let the tomatoes sit at room temperature for a day or two, turning them regularly.

4. Pulse the butter beans in a blender or food processor with the liquid from their tin and season with salt.

5. For the relish, blend all the ingredients with a few spoonfuls of water until almost smooth. Season with salt.

6. To serve, spoon the beans onto a platter and top with the marinated tomatoes, any remaining marinade, and the herb relish. Serve with lettuce leaves, toast, or flatbread.
