This approach allows the use of ingredients even during the colder months.

Kadeau’s unique dishes highlight the exceptional flavors and ingredients. One of their signature dishes is salmon topped with onion pickles, dried lavender, and bronze fennel. It is accompanied by a sauce made of lavender butter, vinegar, and sardine garum, creating a harmonious balance of flavors. The menu showcases a range of culinary techniques and ingredients, including dried tomatoes stuffed with fried herbs and fermented tomato and blackcurrant.

The location provides a relaxed and warm atmosphere, with friendly waitstaff and mellow jazz music playing in the background. Each dish arrives in quick succession, impressing with its flavors and presentation. For dessert, Kadeau offers innovative options like ice cream served in a scallop shell and a saffron brioche-like cake dipped in a brown butter foam. The restaurant’s commitment to excellence is evident in every detail, making it a standout experience in the New Nordic culinary scene.

Kadeau’s dining experience is priced at DKr3,200 (approximately $470/£371) for food, with wine options at DKr2,000 or non-alcoholic drink pairings at DKr1,100. Kadeau holds two Michelin stars and is highly recommended for those seeking a taste of Nordic fine-dining influenced by the unique flavors of Bornholm.
