Orange County Register: Decreased Patronage in Select Restaurants as Prices Escalate

Alejandro Martinez, owner of Stefano’s Trattoria in Winter Springs, expresses concerns about the stagnant sales growth his restaurant has experienced recently. While sales remain higher compared to pre-pandemic levels, increasing food costs and wages have impacted profitability. Martinez had refrained from raising menu prices for five years but had to adjust them three times in 2021 to cover rising expenses.

This trend of raising prices and experiencing a decline in customer traffic is not unique to Martinez’s restaurant. The National Restaurant Association’s June restaurant performance index reveals that 57% of operators reported a decrease in foot traffic compared to the previous year. Same-store sales, on the other hand, showed a mixed picture, with 40% of operators reporting lower sales and 50% reporting higher sales than the previous year.

The current state of the restaurant industry, as indicated by the performance index, is considered “dampened” with an index score of 100.2, just above the neutral point. This follows a decline in May when the index stood at 99.6. The challenging conditions have led some prominent eateries, including Winter Park’s The Coop, to close their doors due to high rent costs.

Consumers like Keisha Montes in Orlando have started reducing their dining out frequency due to increasing restaurant prices. Montes used to enjoy eating out for multiple meals during the weekend but has scaled back to only one dinner on Saturdays and lunch specials on Sundays. She expresses sadness and highlights the value of connecting with others over food and exploring different cultures.

Restaurant menu prices have increased by 8.3% year-to-date, the highest rate since the early 1980s. In comparison, grocery prices have risen by 7.9%. Analysts suggest that restaurant menu prices should not outpace grocery price increases in the long term.

However, not all restaurants are facing customer declines despite higher prices. The Hawkers chain, based in Orlando, has seen an 8% increase in traffic during the first half of the year. Its year-to-date price increase is at a more modest 5.1%. CEO Kaleb Harrell attributes their success to providing an experiential dining environment that goes beyond just a meal. The chain prioritizes creating a vibrant atmosphere and aims to offer guests a complete night out.

Hawkers made headlines in 2021 for raising wages, resulting in improved staffing and reduced turnover. This investment has proven beneficial as the additional cost of higher wages is offset by the productivity and loyalty of the workforce. Low turnover has a positive impact on the labor line of the business.

Alejandro Martinez believes that the restaurant industry is returning to a normal business cycle after a period of increased spending fueled by government stimulus. He recognizes that demand has normalized, and summers are typically slower for the industry. However, looking ahead, restaurant operators remain pessimistic. The National Restaurant Association reports that 34% of operators expect overall economic conditions to worsen in the next six months, while only 10% anticipate improvement.

Martinez shares this outlook, even though he believes his restaurant will succeed due to his dedicated staff. He foresees a challenging economic environment with persisting inflation, leading him to predict the possibility of many restaurants failing in the coming year.
