This prestigious ranking has shifted the epicenter of the restaurant world away from Copenhagen, with Central emerging as a dominant force in the culinary scene. Lima had a remarkable night at the awards, with the Peruvian capital securing four spots on the top 50 list, including two in the top 10. Maido ranked at No. 6, Kjolle claimed the No. 28 spot, and Mayta rounded out the list at No. 47. Spain also had cause for celebration, as six restaurants from the country made it onto the prestigious list, with Disfrutar reaching No. 2. The Barcelona-based restaurant, run by acclaimed chefs Oriol Castro, Mateu Casañas, and Eduard Xatruch, has a rich history intertwined with the legacy of El Bulli.

The World’s 50 Best Restaurants list is determined by a panel of 1,080 industry experts and is independently assessed by Deloitte. Dubai made its mark on the list this year with two restaurants securing spots in the top 50. Tresind Studio, a modern Indian dining room, ranked at No. 11, while Orfali Bros. Bistro claimed the No. 46 position. Himanshu Saini, chef of Tresind Studio, aims to challenge the perception of Indian food and hopes that their restaurant’s story will inspire others to delve into the rich culinary heritage of India.

Paris also saw notable movements on the list, with Le Clarence experiencing a significant drop and Table by Bruno Verjus being recognized as the Highest New Entry at No. 10. Other restaurants that showed impressive ascents include Atomix in New York, which rose from No. 33 to No. 8, and London’s Kol, which catapulted from No. 73 to No. 23.

Special awards were presented at the ceremony, including Best Female Chef to Elena Reygadas of Mexico City’s Rosetta and the Resy One to Watch award to Tatiana in New York. The World’s 50 Best Restaurants list for 2023 signifies the culmination of 21 years of recognition by William Reed Business Media, providing chefs with a platform for distinction and attracting discerning diners. Irish restaurants have not featured on the list since 2003, and this year’s rankings reflect a growing influence from South America and Mexico in the global culinary landscape.
