I recently had the opportunity to dine at Lore by Chef Tatung, a restaurant that bravely opened its doors during the pandemic.

Initially, I expected it to be a fine dining establishment, with a degustation menu showcasing Chef Myke Tatung Sarthou’s interpretation of regional cuisine. However, it seems that the restaurant has transitioned into a family-style a la carte concept.

This setup worked perfectly for our group of four, as we were able to order a variety of dishes and share them like a feast.

While the starters, such as the lumpia, were fairly basic and the kinilaw was good but not necessarily unique to Chef Tatung’s style, the main courses truly showcased the chef’s winning personality. Chef Tatung, known for his television shows and YouTube channel, has always had a keen sense of balance and flavor.

I have been a fan of Chef Tatung for over a decade since he opened his first restaurant, featuring Asian cuisine. I was particularly impressed when he showcased Mindanaoan cuisine at an event I hosted ten years ago. It was a delight to see some of those Mindanaoan dishes incorporated into the menu at Lore.

The menu at Lore offers a wide range of Filipino favorites, each with Chef Tatung’s unique twist. For example, the adobo is made with lengua (ox tongue) and the sisig features chicken instead of the traditional pork.

However, the standout dishes that should not be missed include the kansi na baka, a perfectly balanced sour soup with divine beef. Here, Chef Tatung pays homage to Hiligaynon culinary culture. The pianggang, a flavorful chicken dish in burnt coconut sauce, is a tribute to Tausug cuisine. Lastly, the balbacoa, a generous stew of slow-cooked oxtail and tendon, is a hit with its collagen-rich texture.

Lore is not only a great restaurant for friends and family to gather, but it also has a beautiful ambiance that strikes the perfect balance between elegance and warmth. And of course, the food speaks for itself, offering a tapestry of Filipino flavors that takes diners on a culinary journey around the country. There’s truly a lot to love!
