Looking for a new brunch spot in town? Look no further than Brunch Bureau, the latest addition by Chef RJ Ungco. This trendy restaurant is set to open this week. I had the chance to visit during their soft opening for breakfast and my relatives and I were blown away by their classic menu with a unique twist.

One standout dish is their eggs benedict, which swaps out the usual Canadian bacon for fried tocino. They also put a spin on the hollandaise sauce with a “torched dalandan” flavor and replace the English muffin with butter-toasted banana bread. All of this is topped off with truffled spiced honey for a burst of flavor.

The concept of Brunch Bureau is all about combining the casual vibe of a café with the sophistication of a bistro. Chef RJ shared, “I love brunch food, so we took inspiration from our travels and elevated it for the gram, infusing it with lots of heart and soul, as always.”

Their coffee selection is also influenced by their travels. In addition to the usual americanos, cappuccinos, and lattes, they offer unique options like kanuk, a premium maple syrup mixed with kosher salt; Latina, a Mexican-inspired latte with agave syrup and black pepper; Nippon, an Okinawan-inspired latte with agave syrup and black pepper; and Saigon, a Vietnamese-inspired latte sweetened with condensed milk.

The menu at Brunch Bureau offers all your favorite brunch dishes, from healthy granola and acai bowls to indulgent buttermilk pancakes. They even put a twist on the classic tapsilog by using beef salpicao. If you’re feeling adventurous, try their ebi katsu balls, nori rice crisps with edamame hummus, or croquettes stuffed with spam and kimchi.
